HANDI began in 1987 as four tables behind a Frazer Town bakery, where Ustad Karim Bhai sealed his first copper pot with a rope of atta dough and told the waiter: "Nobody touches it for ninety minutes."
The rule has never changed. No pressure cookers, no shortcuts, no biryani served before its time.
Today his grandsons run the same bhatti, the same six-handi rotation, and the same long family tables where strangers pass raita to each other like cousins. The meat is marinated overnight in hung curd and 23 spices; the seeraga samba and basmati are aged two years; the smoke does the rest.
